Eat Yourself Thin METHOD – Easy Cherry Tiramisu

The heat is up here in Pearland…always a great time for a tasty cool treat!

Todays “Eat Yourself Thin Method” recipe is great for the kiddos and adults too.

 

EASY CHERRY TIRAMISU

Ingredients

  • 1 cup Powdered Sugar
  • 1/3 cup Light Sour Cream
  • 16 Reduced fat Oreos
  • 21 ounces Cherry Pie Filling
  • 1 cup Low Fat Ricotta Cheese

 

Directions:

Combine Ricotta cheese, powdered sugar and sour cream in a large mixing bowl; mix well. Set aside. In the container of an electric blender or food processor, process cookies, in small batches, until finely crushed. Remove 6 cherries from cherry filling; reserve for garnish. To assemble dessert, spoon 2 tablespoons Ricotta cheese mixture into each of six (8-ounce) parfait glasses. Add 2 tablespoons cookie crumbs to each glass; top each with 2 tablespoons cherry filling. Repeat Ricotta, crumb and cherry layers. Finish each serving with an equal portion of the remaining Ricotta cheese mixture. Garnish with reserved cherries, grated chocolate and mint leaves, if desired. Let chill 2 to 3 hours before serving.

    Now this is really GOOD!!! I needed something new and exciting to share with my friends at our most recent playdate so I gave this a try!!! YUMMY and SUPER EASY! I just wonder about the nutrition facts on this one. I need to go back and look at the ingredients and try to figure it out!! It’s soooo… good! Thanks for sharing!
